This is a little bit tricky.
Your linear cutting of the object allows for a straightforward workflow.
First I set the gaps to something smaller (5cm instead of 10cm)
Then I took the orientation of the related Matrix for a Standard Render Camera, so it faces the "cuts" perpendicular or, in other words, as straight stripes. This means the camera needs to be far away and has a long focal length. I rendered this out an Emmision only.
I then used the standard camera with a standard material (meaning I was not in Redshift then) to set up a simple Camera Map.
This allows me to project the image back to the object in any resolution.
I reset the gap back to 10 cm, and in a Color Vertex Tag, I used the Color shader to use the Camera Map Material tag. This sets all points (Vertext) to the needed color.
Back to Redshift, a material with a simple Vertex node, works now.
My tip is to store it as Alembic.
